This is an adaptation of an amazing little dish discovered at abc cocina in Gramercy, New York City – it’s the bomb!
Ingredients:
1 large ripe avocado
120g fresh shelled peas
2 tablespoons finely chopped coriander (cilantro)
Juice of one large lime
Ground black pepper to taste
Fresh or dried chilli to taste – red or jalapeno
Method:
Blanch the peas in a small saucepan of boiling water till al dente, then allow to cool
In a bowl, gently fold through all other ingredients
Place about two tablespoons of the cooled peas straight into the avocado mixture
Puree the rest of the peas and then fold through the guacamole
Serve with warm corn tortillas or crudites or wrap in lettuce leaves … mmmmm
Add more lime juice/chilli/coriander to taste – we all have our own little favourites don’t we?! Yum yum yum!!
