Nut Hummus

The traditional hummus isn’t working for us anymore and so here’s the divine, creamy and tasty nut hummus of your dreams!

Ingredients:

½ cup toasted, unsalted cashew nuts
½ cup blanched almond meal
½ cup hulled, white tahini
½ cup extra virgin olive oil
½-1 cup filtered still water – depends on how thick you prefer your hummus
¼ cup lemon juice – juice of one large lemon, add more if you like
1 large garlic clove, finely chopped*
2 teaspoons freshly ground white pepper
2 teaspoons ground cumin

Method:

Place all ingredients in a blender or food processor and blend till smooth.

Add more nuts or water for consistency. More/less tahini or lemon juice for flavour and zing.

Serve with meat, fish, vegetables or with crudités or corn chips for a party dip.

This has really changed my life … the chick peas were causing some bloating and flatulence (please don’t tell anyone about the wind haha!) so another yummy solution was needed!

*Omit the garlic if you would like to serve with fruit mmmm
