Crunchy granola is a big favourite with friends and family so I’ve been experimenting and this one is a cracker with a cardamon twist that will surprise you!
1½ cups golden flax seed meal
1½ cups chunky chopped almonds
1½ cups chunky chopped macadamia nuts
1½ cups currants (dried blueberries)
1 cup white chia seeds
3 teaspoons cardamon, ground
2 teaspoons nutmeg, ground
¼ cup honey
¾-1 cup water
Pre-heat oven to 150ºC and line a large baking tray with parchment.
In a large bowl, mix all the dry ingredients with a big spoon.
Add all the honey and half the water and mix thoroughly to a sticky paste. Add more water if it’s still a little too dry. The texture is to have the ingredients sticking together.
Spread the mixture onto the tray to an even thickness and place in the oven for about 30 minutes, keeping a nose on the toasting process!
Remove from the oven and break it up into chunks and place back into the oven for another 20-30 minutes. Remove when all the pieces are hard and crunchy.
Serve with almond or macadamia milk and some fresh fruit. Yummo!!
