Cherry Chia Pudding

This little pudding is a wonderfully simple addition to your repertoire for fruity fun anytime of the year. The pudding is made from frozen cherries, so you could use any frozen berries you have – make this one your own! Garnish with fresh fruit or a dollop of nut cream!

Ingredients:

½ cup frozen cherries – or any frozen berries
½ cup white chia seeds
1 cup filtered water
Juice of half a medium lemon

Method:

Blend all ingredients with a hand-blender straight into a plastic container that can be sealed and go into the fridge.

Or you can blitz the fruit in a regular blender or food processor so it’s pulp then stir in the chia seeds.

Leave in the fridge for one hour and then check the consistency. If it’s too wet, add more chia seeds … if it’s too firm, add a little more water.

Serve with fresh fruit or toasted nuts and seeds and a sprig of mint.

You can also add maca powder or pea protein isloate if you are looking for an extra boost – remember to add a little more water if you are adding these or your pudding will become too thick.

Enjoy for breakfast, snack or dessert. Yummy!!
