Chocolate Flan

Classic Sarah recipe that was almost all eaten before I managed to snap a quick picture!!! These are vegan, raw and scrumptious! I made individual sized mini-flans based on the Key Lime Pie recipe and adapted it for some chocolate lover friends for dessert for a wonderful dinner party last weekend. The base is the same as the Key Lime Pie … but I tweaked it for this recipe and this is enough for four small, 10cm diameter flan dishes: 1/2 cup macadamia nuts 1/2 cup almonds 1/2 cup dessicated coconut 1/2 cup coconut butter 1/2 cup coconut oil I … Continue reading Chocolate Flan

First Sydney Curry Paste

After some grocery shopping today with Maxine, we realised that all the pre-made curry pastes in the supermarket have sugar in them, so I felt to make one up! 4 garlic cloves 1/2 large red onion – roughly chopped 2 teaspoons dried chilli 2 teaspoons turmeric 2 teaspoons cumin seeds or ground 2 teaspoons coriander seeds or ground 15 or so curry leaves 1 star anise 2 teaspoons of fresh chopped lemongrass 2 tablespoons of water Blend all of the above in a small blender till you have a fine paste. Herby Green Pesto Soup

Welcome to my kitchen!! I felt to take a photo of the soup-in-progress because there are so many green soups here that all look the same – here is the pre-blended masterpiece. I had some spinach in the fridge that needed cooking so this is what I felt to make this morning for breakfast and to have some green goodness in the fridge for my busy week ahead. Ingredients: One large leekSix celery sticks 700g fresh spinach 500g fresh spring greens 20 toasted almonds (whole) 1/2 cup toasted pine nuts 1 clove garlic 3 bay leaves 3 tablespoons coconut oil … Continue reading Herby Green Pesto Soup

Seaweed Soup & Fried Fish

I have a very busy week ahead and felt that preparing my fridge for the late nights and long days would be the very best care I can give to myself and my body. Seaweed Soup (makes about 4 serves) Soak one cup of mixed dried seaweed (sea vegetable) in a bowl covered with filtered water for it to rehydrate. This takes about 15 minutes. While the seaweed is soaking, heat 3 tablespoons of coconut oil in a large saucepan with a lid. Thinly slice one large brown onion and four-six sticks of celery and saute gently in the pan … Continue reading Seaweed Soup & Fried Fish

Cherries & Nut Cream

Tonight after having a delicious meal with my flat mate, we felt like something sweet. I felt to share a little treat that won’t keep you awake or jumping around. It’s delicious and took me ten minutes to whip up! Put some frozen cherries (or berries) into a small saucepan with a spoonful of honey to your taste and simmer gently on the stovetop. While that is bubbling away, put into a blender: 1 cup of macadamia nuts (or almonds, or half/half) 1 sliced, peeled, cored apple ½-1 cup of almond milk (unsweetened, or water) Blend to a thick, smooth paste. Add … Continue reading Cherries & Nut Cream

Crunchy Spring Salad

I was blessed to have a house full of truly beautiful people and shared dinner with Love. With our salmon fillets, I made a delightful salad that could possibly be my yummiest ever! I know that when I am honouring how far I have come from how I used to eat in the past, I come alive. There’s an honesty in the way I prepare food and feel the care for myself and others I am sharing food with. It’s changed more recently where I only want to give myself loving food and eat honouring my body. Ingredients: Baby cos … Continue reading Crunchy Spring Salad

Divine Herb Soup

My intention was to make a batch of the Herby Fish Chowder – because it is so nourishing. After all, we eat to nourish ourselves right? But there is a twist in the tale … I doubled the herb content and added fresh spinach instead of fish … here’s how the inspired Divine Herb Soup evolved to be the smooth, multi-layered, simply loving harmony of scent, taste, picture perfect green-ness I have ever had. Wash and dry 1 cup each of fresh: Sweet basil Tarragon Flat leaf parsley Dill Place in a blender with two garlic cloves and a small … Continue reading Divine Herb Soup

Coconut & Almond Truffles

I had a lovely lunch last weekend with Alex and we were discussing how much sugar impacts on how much we eat. We’ve both had a similar experience – by reducing sugar we have reduced the craving for more food. It’s like sugar runs another program in my brain that overrides my ‘satisfied’ belly. We have both found that by cutting down on sugar of any kind, the feeling of ‘enough’ could truly be felt and over-eating is no longer a driving force at meal time. Inspired by this conversation, I’ve created a ‘sweet treat’ that is lovely to offer … Continue reading Coconut & Almond Truffles
