Fennel Celery Mince & Guacamole!

This wholesome amazingness was whipped up in about 20 minutes and totally loved by Maxine and I for dinner tonight … you can use whatever mince you like or mash firm tofu for a hearty vegan option.

Here’s the simplicity of the meal and you can create your own with whatever you have in the fridge – be bold and you will get more confident to explore your own yummy recipes.

The only thing that always remains the same is the guacamole – I’ve been making it the same  my whole life and it’s scrumptious and as they say – if it ain’t broke, don’t try to fix it!!

2 tablespoons coconut oil
1 red onion finely diced
1 fennel bulb finely diced
1 cup finely sliced celery
500g lamb mince (but you can use whatever protein you want!)
1 teaspoon dried chilli flakes
1 teaspoon tumeric
1 teaspoon cumin
1 teaspoon caraway seeds
1 teaspoon cracked black pepper

Heat coconut oil in a deep fry pan on a medium heat

Add onion, fennel and celery and fry gently till starting to colour and stick to the pan.

Add mince and spices and stir thoroughly then leave to ‘catch’ on the pan so it starts to get crispy in places. Stir and leave a few times so there are lots of crispy yumminess in the pan.

While that’s happening – here is the simplest and most divine guacamole in the world!

Run a knife lengthways around two avocados.

Take a teaspoon and scoop out chunks of avocado into a bowl.

Add fresh or dried red chilli and fresh garlic to your taste

Add lots of cracked black pepper

Add the juice of one lemon and mix well gently, leaving it chunky and gorgeous.

Serve the mince in a bowl with lashings of guacamole over the top

Your body will be dancing around with joy!!

Hi Sarah, just served a fresh green juice for breakie, a walk through West End markets ,Southbank and home to your Fennel,Celery Lamb Mince with Avacado smash for my family for lunch & wow ,they all loved it!!!   3. Just made it (again) and at the end added tinned & fresh tomatoes, bit of coconut cream and some kale. scrummo!
