Fried Kelp Noodles with Fish & Greens

IMG_2995Kelp noodles are so good! Full of minerals and natural sodium and they are the best pantry item for the base for any little stir fry you are inspired to make. They are naturally gluten, dairy and sugar free and have huge amounts of calcium. This recipe is totally delicious – serves two people, takes 20 minutes!

Ingredients:

1 x 340g packet of Kelp noodles
600g white fish fillets, sustainably caught, sliced
2 cups broccoli, cut into little trees
2 cups kale, finely sliced
6 spring onions, chopped
3 tablespoons macadamia, sesame or coconut oil
2 tablespoons toasted sesame seeds
2 teaspoons dried chilli flakes
Juice of one lemon

Method:

Heat oil in a large frypan or wok to a medium heat. Add noodles, broccoli trees and kale and fry gently for about 5 minutes until starting to soften and brown.

Place sliced fish in amongst the greens and sprinkle over the spring onions and chilli and add lemon juice and sesame seeds. Turn fish gently after 5 minutes.

Serve with a dollop of hummus, a jig, a swish and a swagger and a shimmy of delight at how incredibly self-loving you are to make this truly nurturing meal!
