When I looked in the fridge and found beans and lettuce, who knew it would turn out so spectacularly scrumptious! I had recently tried some grilled lettuce in a restaurant and thought … this could work …
Ingredients:
400g raw French green beans
2 cups cos lettuce, sliced
1 medium brown onion, finely sliced
1 medium clove garlic, finely chopped
1 cup fresh flat leaf parsley
100g almond flakes
Ground black pepper, to taste
¼ cup olive or macadamia oil
Method:
Trim the beans and cut into 3cm pieces. Slice the onions and chop the garlic. Slice lettuce leaves and remove the parsley leaves from the stalks.
Heat the oil in a large frypan on a medium heat.
Place beans and onions into the pan and stir frequently as they start to soften. After about 8 minutes, add the garlic, almonds and pepper.
Once the beans are soft, almonds are toasted and onions is starting to brown, add the parsley and lettuce and stir thoroughly for another 2 minutes then serve!
The fish I had was flathead and blue eye cod simply fried in a little olive oil and chilli with a squeeze of lemon juice at the end. You can serve it with any protein you feel to.
These beans are jumping with taste and a perfect recipe to use those big outside lettuce leaves that may otherwise be discarded. Try it … it will change your view on lettuce forever!
