Yummy Fennel Salads

Hello amazing people 🙂

I’ve had two scrumptious salads for lunch this week that I want to share with you … no photos as they were so delicious I realised too late!!

Tuesday’s Shoot Day Salad

Finely sliced cos lettuce, fennel and celery sticks
Small pieces of smoked salmon
Fresh chopped parsley
Chopped macadamia nuts
Ground black pepper
Lemon juice
Macadamia nut oil
Served with avocado chunked into my plastic container!

Wednesday’s Office Day Salad

Following on from the deliciousness of yesterday, I felt to go with the same theme and tweak and twist … and shake rattle and roll

Finely sliced fresh spinach and fennel
Finely sliced celery tips and leaves
Chopped macadamia nuts
Ground black pepper
Lemon juice
Macadamia nut oil
Served with a tin of chilli infused tuna and avocado chunked into a white bowl and eaten at my desk.

A couple of my work colleagues were drooling as I was gobbling … mmmmm

I went for a lovely long walk after lunch and enjoyed the glorious sunshine!

  2. Yummo Sarah. I made the Tuesday Salad (on a Sunday – daredevil I know!) and then had some left over all week and this morning I gently fried what was left with some bacon and brussell sprouts and it was scrummo (again).

    I love re-connecting with foods that I’ve long forgotten (celery/brussell sprouts) and connecting with new ones (fennell). Thanks for the inspiration. s x
