Sticky Lamb Ribs

Lamb ribs were on sale last week and I have never cooked with them before. As I am on a lean budget at the moment, I grabbed some and thought I’d have a crack at a new recipe …

Pre-heat the oven to 220oC

1 small brown onion
10 or so cherry tomatoes
2 garlic cloves
1 teaspoon cracked black pepper
1 teaspoon chilli flakes
1 teaspoon fennel seeds
1 teaspoon turmeric
1 tablespoon fresh or dried thyme
Juice of half a lemon

Wizz all the ingredients in a blender till a smooth paste.

Add more chilli to the sauce if you want Super Spicy Ribs!

Put the ribs into a dish and pour the sauce over the top and coat all the ribs with the sauce. Roll them around so they have sauce all over them.

Put in the oven and turn it down to 150oC and cook for 40-60 minutes or till the meat is falling from the bone.

These were super tasty and sticky and must be eaten with fingers!!

  1. I’ve never tried cooking lamb ribs either – looks like it would be worth a go! And you could use the lamb bones afterwards to make a stock too – also good for the budget!

  2. Yum!!! I have lamb loin chops, on sale at Coles this week, which I would love to try with the recipe for the coating sauce. I’ll post again when I have tried them xo
