Watercress, Spinach & Pea Soup

I don’t usually have a diatribe before the recipe, but feel this is relevant today as it was when this recipe came into being in March 2014 … (written in April 2014) Twenty two days ago I had a total laparoscopic hysterectomy – my uterus, ovaries and cervix were all removed with key hole surgery. After a four hour operation and three days in hospital, I am on a very steady and beautiful recovery and recuperation. Over the last four weeks, my food has been as much a part of the healing as the preparation, operation and rest. I now truly see … Continue reading Watercress, Spinach & Pea Soup

Radicchio, Fennel & Salmon Salad

Hello 🙂 Welcome to my desk. My week has been incredible busy so I am taking my lunchbreak at my desk to share this scrumptious salad with you all. Cherries & Nut Cream

Tonight after having a delicious meal with my flat mate, we felt like something sweet. I felt to share a little treat that won’t keep you awake or jumping around. While that is bubbling away, put into a blender: 1 cup of macadamia nuts (or almonds, or half/half) 1 sliced, peeled, cored apple ½-1 cup of almond milk (unsweetened, or water) Blend to a thick, smooth paste. Add … Continue reading Cherries & Nut Cream
