Hello everyone! I just found this in some notes … a creation from a while ago that is going on the menu for sure! Pop some skinless chicken thighs (with the bone) into a deep saucepan and barely cover with water. Simmer with sesame oil, star anise, cinnamon bark, shallots, lemongrass, peppercorns. chilli and garlic … when the chicken is almost falling from the bone … strain the liquid and save it. Sarah’s Luscious Laksa

Laksa is a Malaysian soup that was my favourite when I lived in Australia. There aren’t many in London, so I have created my own. Sarah’s Coconut Dahl

This is amazing – now I know I say that all the time (!) but this is delicious. Either blitz in food processor or finely chop one large brown onion and two fresh garlic cloves. In a saucepan melt two tablespoons of coconut oil and add the onion and garlic. Fry gently and slowly. The aim is to have it lightly browned and clear. Gently, gently. Coriander seeds Cumin seeds Fennel seeds Cinnamon Cardamom Cloves Fenugreek Black peppercorns Black mustard seeds Chilli Roast them on the stove top to accentuate the aromatic qualities Remove from the heat and blend to a powder Store in an air tight container in the fridge and it will keep for ages Add to coconut milk, garlic, red onions and meat, fish or vegetables and simmer – remember to add lime juice for an amazing, authentic curry.
