Celery
Fennel
Spinach leaves
Red pepper/capsicum
Because this salad doesn’t have lettuce in it, I like to dress it in the morning before I leave home with lemon juice and oil (olive or avocado or hazelnut or macadamia – whatever you have and whatever takes your fancy!) … that way the fennel doesn’t brown and the dressing infuses the celery. It’s really something!
I put it into a plastic container and toss this all well so everything is well coated with dressing. I am a minimal dressing person – I don’t like salad swimming in dressing – I just like it coating everything without the overflow 🙂
Add …
Pieces of smoked salmon (or fish or some other protein)
Sprinkles of wakame or sea vegetable
Chopped macadamia nuts
Lots of cracked black pepper
NO salt is needed because the celery and seaweed are naturally salty.
This salad was a filling, substantial, tasty, healing, nutritious, magnificent!
