Spontaneous Amazingness in my kitchen tonight …
Mix well together in a bowl:
Half a leek, finely sliced
4 teas minced lemongrass
1/4 cup dried, shredded coconut
Zest of one lime
1 teas gluten free tamari
1 teas coconut oil
1 teas sesame oil
1 teas chilli flakes
In an oven tray place a large sheet of foil
Place the leek and lemongrass mixture in the foil
Place a piece of fresh white fish fillet on top (I used basa fillet)
Sprinkle sesame seeds on top (I used white, but could use black too – or a mixture of both!)
Place a small piece of baking paper over the fish so the sesame seeds don’t stick to the foil
Fold it all up, like being tucked into bed, and seal well so it retains all the steam
I baked mine for 30 mins at 175oC but that will depend on the thickness of your fish – so check it at 20 mins to see how it’s going and return to the oven if needed
Serve with a hearty squeeze of lime juice …
I would like to try this with prawns as well mmmmm
I truly amazed myself tonight!! Especially that I paused to take a photo 😉
