Red Curry Baked Fish

I used small whole sea bass that were on sale at the market – but you could use any whole fish that has been de-scaled and gutted

Place the fish in some foil in a baking dish

Smear a teaspoon of red curry paste inside and all over the top

Pour over a little coconut milk and baked for 30 minutes

Gently lift off the fillets with a wide spatula and pour the self-made sauce over the top

It’s a very yummy, quick and simple fish dish!
