Fennel, Coconut & Mint Salad

The sun has been shining in London and we had a barbecue to celebrate! Here is my contribution … In a large bowl toss together finely sliced fennel, baby gem or cos lettuce leaves with lots of shredded coconut and fresh mint leaves. Beautiful Bean Salad

Protein for vegetarians! Soak chickpeas and cannellini beans overnight then boil gently for one hour. Drain, rinse in cold water and allow to cool. Dress with fresh chopped flat leaf parsley Chopped, pitted green olives (in olive oil, not brine – too salty!) Roughly chopped rocket leaves Add chilli if you feel like some extra fire Lots of ground black pepper Serve with an olive oil and lemon (or orange!) juice dressing and a handful of toasted, blanched almonds. Julie has asked me to come up with some fresh ideas for a work lunch meeting she is holding for 17 people. A great idea is to ask everyone to choose his or her protein the week before, then you know how much you will need to buy and prepare. Keep it simple and buy a few BBQ Chickens already cooked (no stuffing) and cut them into quarters with some good quality shears/scissors so they are easy to manage. Jinya’s Warm Broccoli Salad with Roasted Spicy Almond Chunks

You could enjoy this at any time of day, but I had it for breakfast and it was very fitting indeed. While steaming some broccoli florets, grind a handful of almonds – not too much though. Warm some olive oil in frying pan on medium heat and add the nuts. Add a teaspoon of turmeric, a sprinkle of cumin, a dusting of sweet smoked paprika and a few caraway seeds. Candida’s Easy Spinach, Tuna & Raspberry Salad

I just made this yummy easy salad in just a few minutes for my supper and it was delicious… a large handful of washed baby spinach leaves a small handful of raspberries washed and cut in half a can of tuna I had some black and green olives with sun dried tomatoes and garlic in the fridge that I cut up a few and added to the above. Sarah’s ‘Ay Carumba’ Mexican Sides

It’s Taco Tuesday here in Bangalow and here are my sides to go with the lamb and/or roasted vegetable taco’s: Sarah’s World Famous Guacamole (party size) 7 ripe avocados Juice of four lemons 3 teaspoons ground black pepper 3 cloves fresh garlic – finely chopped Fresh red chilli (to taste) – finely chopped Chunk the avocado from the skin in big pieces and put into a bowl with the rest of the ingredients and mix gently.
