This tasty little number will change how you feel about the humble pea. Peas are a very good source of vitamin K, manganese, dietary fibre, vitamin B1, copper, vitamin C, phosphorus and folate. They also contain vitamin B6, niacin, vitamin B2, zinc, protein, magnesium, iron and potassium.
You can serve this humble green goodness with any protein you choose. Or pop some leftovers in an omelette or a salad. It’s worthy of making a big batch just so you can have extra. This meal takes about 10 minutes from start to finish. Peas on Earth fellow Humans!
Ingredients:
2 cups frozen baby peas
4 spring onions, finely sliced
5 baby cos lettuce leave, finely sliced
½ cup flat leaf parsley, roughly chopped
Dried or fresh chilli, to taste
Ground black pepper, to taste
2 tablespoon olive oil
Method:
Heat oil to a low-medium heat in a frypan
Carefully add the peas and the spring onions, being careful as they pop when added to the hot oil!
Toss around until the peas soften then add the lettuce, parsley, chilli and pepper till the lettuce is barely wilted.
Serve!!
