Simple Lamb Curry

Fry red or brown onion (or both!) in a little coconut oil with some red curry paste for a few minutes to bring out the flavour of the spices

Add some cubed lamb to brown before adding and some tinned (or fresh) tomatoes and slowly simmer for an hour or so till tender

Add some pumpkin cubes, simmer till those are cooked and right at the last minute stir through some spinach and coriander and coconut milk to warm through … yum yum
