Slice a couple of shallots and fry them along with some garlic, chillies (dried or fresh), and add any herbs you feel. I put in some tumeric and oregano. Then add a tin of chopped tomatoes and a drained tinned of beans of your choice (I used butterbeans). Then I added a little gluten free tamari and put some fresh herbs in, parsley and coriander and put a teaspoon of rose harrisa paste in too. Simmer gently till all the flavours have combined. Fiona’s Coconut, Spinach & Cauliflower Dahl

Fry a red onion and garlic along with some fresh or dried chilli in some oil Add red lentils along with some coconut milk or water – I actually used the creamed coconut sachets diluted in water. Add some spices. For example, tumeric, chilli, fennel seeds, black onion seeds and some ground coriander. Simmer for 10 minutes. Cut up half a cauliflower and add in – continue to simmer – add some black pepper, lemon juice and some spinach to top it off. Of course I put a fried egg on top of it when I served it – YUMMY. The Magical Brussel Sprout and Leek Soup

This is probably the greatest soup of all time!! Well – at least this week 🙂 Trim and halve some brussel sprouts – I used about twenty or so Thinly slice one leek Slice two celery sticks Put all in an oven tray and coat with a few tablespoons of olive oil, teaspoon each of cumin, ground black pepper and turmeric and roast till sprouts are just beginning to soften and leeks are starting to brown.
