Fiona’s Coconut, Spinach & Cauliflower Dahl

Fry a red onion and garlic along with some fresh or dried chilli in some oil Add red lentils along with some coconut milk or water – I actually used the creamed coconut sachets diluted in water. Add some spices. For example, tumeric, chilli, fennel seeds, black onion seeds and some ground coriander. Simmer for 10 minutes. Cut up half a cauliflower and add in – continue to simmer – add some black pepper, lemon juice and some spinach to top it off. Of course I put a fried egg on top of it when I served it – YUMMY.
