This is our take on Eton Mess – to celebrate Jack’s 18th birthday …
Meringue (hard to get sugar free or make your own with egg whites and a little palm or fruit sugar)
Cashew nut cream – blend cashews with peeled, cored apple till a fine paste
Fruit mix – we used strawberries, raspberries, blueberries, grapes and lots of passionfruit
Assemble and eat!!
