Bacon & Herb Frittata

Herb-bacon-frittata

Tasty, quick and delicious bacon and herb frittata for breakfast, lunch or dinner!

Ingredients:

1 brown onion, sliced
2 long rashers of bacon, sliced
½ red capsicum (pepper), sliced
6 eggs, beaten
½ cup water
1 clove garlic, finely chopped
1 cup fresh spinach leaves
1 cup chopped fresh basil
1 tablespoon fresh thyme leaves
1 teaspoon ground black pepper
1 tablespoon olive oil

Method:

In a large, deep, non-stick frypan, heat olive oil on a medium heat and fry the onions and bacon until starting to brown.

Add capsicum (pepper), ground black pepper, garlic and thyme and stir through well and leave for a couple of minutes for the capsicum to soften.

Add spinach and basil and stir through.

In a large mixing bowl, beat eggs and water till well combined then pour into the pan. Stir through so all the ingredients are starting to cook through evenly.

Allow to cook on a low heat so it cooks through without too much colour.
