Gluten Free Coconutty Biscuits

These gluten free cookies are lovely to have for when friends drop around for a cup of tea, for the school lunchbox, a little snack at work or for something to munch when watching a movie – they are an adaptation on my lovely friend Gail’s recipe and they are lovely, light and very yummy and crunchy! This recipe makes about 24 small biscuits. Rachel’s Coconut Ice Cream

Blend 2 small or 1 large can coconut cream, a banana, some vanilla powder or a glug of vanilla essence,  then freeze. Or for the berry version add a good handful of fresh or frozen berries of your choice TIP Works better if you stir the setting mixture whilst its freezing every 30 mins until it sets. This is an adaptation of a Marie Claire Recipe. That one calls for lemongrass and is more of a Thai flavour, but I didn’t have any so I made mine like this: In a frypan on a moderate heat I added about two tablespoons of coconut oil. Once melted I fried approx 1 tablespoon of fennel seeds and added three star anise. Judith’s Coconut & Cinnamon Tofu

SPICE MIX Approximately same amounts of: Aniseed, Fennel Seed, Cardamom Seed, Cloves (whole). Gently heat them in a dry frying pan so the fragrance can unfold. Let them cool off and then grind to powder, add same amount of Cinnamon Powder and also some Vanilla Powder. Find your own favorite mixture. TOFU Take 200g of firm Tofu and cut it up in small strips.
